The best (EVER) pumpkin bread

A few days ago, my neighbor brought over some pumpkin bread to share with us. When I went to take my first bite, I had no idea what I was in for. This is by far, the most moist, delicious, melt-in-your-mouth pumpkin bread I have ever had! I asked her for the recipe to share with all of you! This is a must-make on my list and I hope you enjoy it just as much as I did. Imagine the perfect blend of pumpkin and spice goodness, topped with light and fluffy cream cheese frosting mixed to perfection—need I say more?!

Best (ever) Pumpkin Bread

Ingredients:

For the bread:

  • 1 and 3/4 cup flour

  • 1 tsp. baking soda

  • 3/4 teaspoon salt

  • 1 tsp. cinnamon

  • 1/4 tsp. nutmeg

  • 2 eggs

  • 1 and 1/2 cups of sugar

  • 1 cup of pumpkin puree

  • 1/2 cup canola oil

  • 1/3 cup water

For the cream cheese frosting:

  • 2 ounces cream cheese, softened

  • 2 TBS butter, softened

  • 3/4-1 cup of powdered sugar

  • 1/4 tsp. vanilla

Instructions:

  • Preheat oven to 350 degrees and grease standard size loaf pan.

  • In a large bowl, mix flour, baking soda, salt, cinnamon and nutmeg together. Make a well in the middle and set aside.

  • In a medium bowl, thoroughly beat together the eggs, sugar, pumpkin puree, oil and water. Add these wet ingredients to the well of the dry ingredients and mix until combined. Pour batter into a greased loaf pan.

  • Bake for 60-70 mins but tent a piece of foil over the top, half way through (form a dome so the bread can still rise). Start checking the bread at 50-55 mins, if it looks wet on top, take the foil off and allow it to finish cooking. Cook until toothpick comes out clean. Let the bread cool in the pan before removing.

  • Make the frosting by creaming the frosting ingredients together. Spread on top of bread, enjoy!
