Yummy and easy blueberry muffins

As a busy, working mama it’s not always easy to whip up something homemade, quick, easy, and delicious for the family. That’s why today, I’m sharing one of my all time favorite classic recipes—blueberry muffins with crumble topping! I like the fact that I usually have blueberries in the fridge and the other ingredients to make these in a pinch and the prep time is probably a total of 15 minutes before they are in the oven! This recipe is from Sally’s Baking Addiction (shocking, I know!) maybe one day I’ll venture into other cookbooks but for now, I’m still swooning over hers, whose recipes never let me down! This recipe below is directly from her original cookbook and isn’t online (from what I can find!) It’s meant for jumbo muffins but I just use a standard muffin pan and adjust the bake time (reflected below).

My favorite Christmas cutout cookies and icing

My daughter Ava and I got a head start a few weeks ago and whipped up some Christmas cut out cookies. I was quickly reminded of why I LOVE these special treats and especially how much easier the process has become since I started using the process recommended by Sally’s Baking Addiction! Simply put, you mix and roll the dough out before placing it in the fridge to become cool enough to work with! It’s a genius idea. When we removed it from the fridge it was cold enough to make firm (no more floppy cut outs wondering what they are) shapes that easily transferred to the cookie sheet! I hope you enjoy these as much as I have. Good news: they also freeze well, so, then you can prevent yourself from eating them all in one sitting ;)

A few days ago, my neighbor brought over some pumpkin bread to share with us. When I went to take my first bite, I had no idea what I was in for. (Fresh Picked) Apple Crisp

This weekend, we visited the local Apple Farm and along with riding the tractor 100 times up and down the hill (life with a 2.5 year old), we managed to snag some fresh Spartan apples! It was my grandpa’s Birthday yesterday and so I decided to make some fresh apple crisp. As always, I looked up my girl, Sally’s recipe for inspiration. I found a cinnamon apple pear crisp that was exactly what I was looking for, I just traded out the pears for more apples! I’ll be honest that the hardest part of the whole prep was peeling and slicing the apples because 1) I was doing it the old fashioned way without any cool kitchen tools and 2) For some reason this year, the apples are really small here(perhaps the super hot summer?). But, I persevered and boy, was it worth it! All that buttery goodness packed into one pan and since it’s fruit, you’re allowed to have 2 servings, right?! :)
