The best (and easiest) granola

In recent months we have been working hard to restock our pantry with gluten and grain free alternatives (while I still indulge in all my fav sweets a quarter of the time!) My mom shared this incredible granola recipe with me lately and I have been making it multiple times a week! I love eating it as a snack or easy lunch over greek yogurt! Not to mention, it makes my house smell like a cinnamon spice and everything nice!

Ingredients:

  • 1 cup slivered almonds

  • 1 cup walnuts

  • 1 cup pumpkin seeds

  • 1 cup sunflower seeds

  • 1 cup shredded/flaked coconut

  • 1 cup cashews

  • 1/4 cup almond flour

  • Cinnamon

Wet:

  • 1/4 cup maple syrup

  • 1/4 cup coconut sugar

  • 1/4 cup melted coconut oil

Instructions:

  • Preheat oven to 300 degrees. Cover baking sheet with parchment paper.

  • Mix the dry ingredients: Combine all of the nuts, almond flour and cinnamon (sprinkled throughout) together.

  • Mix the wet ingredients: In a large bowl, stir the maple syrup, coconut sugar and melted coconut oil together.

  • Pour the wet ingredients over the dry ingredients and mix well with a spoon.

  • Plump onto cookie sheet, bake at 300 degrees for 20-25 minutes or until it turns a golden brown. Stir half way through. Once done, remove from oven, press down with a spatula and let set to cool.
